Simple Pasta Aglio

Ingredients
  1. Pasta: 200g (about half a box) of Spaghetti or Linguine.
  2. Garlic: 4–6 cloves, thinly sliced.
  3. Olive Oil: 1/3 cup of extra virgin olive oil.
  4. Red Pepper Flakes: 1/2 tsp (optional, for a little heat).
  5. Parsley: A handful of fresh parsley, chopped.
  6. Salt: For the pasta water.

Instructions

Boil the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until it is "al dente" (firm to the bite).

Tip: Save 1/2 cup of the starchy pasta water before draining.

Sauté the Garlic: While the pasta cooks, add the olive oil to a large skillet over medium-low heat. Add the sliced garlic and red pepper flakes. Cook slowly until the garlic turns a light golden brown (about 3–5 minutes).

Warning: Don't let the garlic turn dark brown or black, or it will taste bitter.

Combine: Add the drained pasta and the reserved pasta water to the skillet. Toss everything together for 1–2 minutes over medium heat. The water and oil will emulsify into a silky sauce that coats the noodles.

Finish: Stir in the fresh parsley. Serve immediately. You can top it with a little Parmesan cheese if you have it!
